You do not need a drawer of gadgets. You need one sharp knife and a few movements done well.

A sharp chef knife and a steady hand replace most kitchen gadgets. The grip matters first: pinch the blade just ahead of the handle between thumb and forefinger for control, and curl the fingers of your other hand into a claw to guide the food and keep your fingertips safe.

Learn three cuts and you can prep almost anything. The rock chop, with the tip staying on the board, makes fast work of herbs and garlic. Even slices come from a steady draw of the blade. A dice is just slices turned and cut again. Consistency matters more than speed, because evenly cut food cooks evenly.

Above all, keep the knife sharp. A dull blade is both frustrating and dangerous, because it slips instead of biting. Hone before each session and have your knives properly sharpened a few times a year. A keen edge turns a chore into something close to meditative.
